Oven Baked Brown Rice Recipe

I’m always trying to find ways to eat healthier!!! This recipe is a staple at my house and it is super easy to make.

Oven Baked Brown Rice Recipe

2 1/2 cups chicken broth or chicken stock
(preferably low sodium)
1 1/2 cups brown rice
(I use 1 1/4 cups brown jasmine or brown basmati rice and 1/4 cup wild rice)
3 Tbsp dehydrated onion
1 Tbsp minced garlic
1 Tbsp olive oil
(you can omit this and it will be just as good)

Preheat oven to 375º
In a small saucepan bring the broth to a boil
In the meantime, measure out your rice and put it in a 8 x 8 square glass casserole dish
Add the dehydrated onions and garlic
As soon as the broth boils pour it over the rice
Cover with 2 pieces of foil
Bake for 1 hour
Thats it!!! Super simple!!!

I like to stir in sauteed mushrooms after it comes out of the oven. Be inventive, you can stir in any veges, herbs, parmesan cheese, leftover chicken etc!!!
